Lime and Ginger Cheesecake Recipe
Delicious on there own, dunked into a hot drink or paired with other fab ingredients for a wonderful pudding. Why not try our Lime and Ginger Cheesecake, a creamy no-bake cheesecake suitable for all occasions, from dessert at a dinner party, or just for you anytime of day! It’s a family favourite of ours!
Lime and Ginger Cheesecake
Total time: 50 mins (includes 30 mins chilling time)
200g Teoni’s Stem Ginger Cookies, crushed.
50g (2oz) butter, melted.
2 x 250g tubs mascarpone cheese.
40g (1 1/2oz) icing sugar, sifted.
Finely grated zest and juice of 2 limes, plus lime and lemon zest to decorate.
1. Mix together the crushed biscuits and melted butter and press into the base of an 18cm (7in) spring sided or loose-bottomed cake tin (also makes 4 small individual desserts).
2. Place the mascarpone cheese, icing sugar, lime zest and juice in a bowl and beat together.
3. Spread over the biscuit base.
4. Chill for 30 minutes.
5. Decorate with the lime and/or lemon zest
Then tuck in and enjoy!!
